Established in 1969, the National Meat Training Centre provides skill and expertise to the meat industry by focusing on its greatest asset — our students. The Olds College Retail Meat Store sells products created by the students of our renowned Meat Processing Certificate program.
We are passionate about the art of the artisan butcher — quality, craftsmanship and sustainability. Expert staff guide students through an intense program that is the only of its kind in North America (and one of two in the world). Students learn the entire process, from slaughter to cutting and processing products. They also gain valuable experience in marketing, merchandising and customer service through the Retail Meat Store.
Fresh Meat Fridays
Most Fridays during the semester, our merchandising students create a full-service counter, including a variety of top products such as cushions, pinwheels, pastries and more – prepared ready to hit your grill or oven.

Shopping at the Retail Meat Store ensures you are getting top-quality, locally-grown meat processed by students under the supervision of our expert staff. We only use local animals handled humanely, and the meat is processed on campus by current Meat Processing Certificate students as part of their hands-on learning.
Our products and supply revolve around our students and program. What we sell in the Retail Meat Store each week depends on the number of students in class and where we are in the curriculum (we never bring in outside meat). For example, we regularly offer a variety of steaks — oyster, petite tender, blade strip, merlot and delmonico — but there are only two per animal, so supplies are limited by class sizes.

Supporting Our Community
The National Meat Training Centre at Olds College is proud to work together with theMountain View Food Bankto address the growing number of area residents accessing the food bank each month. Our staff and students offer free butchering and processing of cows that have been donated to the Food Bank. The cost of wrapping & labeling are covered by donations made to the Food Bank.
